The South Beach Diet
The South Beach diet is a diet system started by Florida-based cardiologist arthur agatston which stresses that one should consume "good carbs" instead of "bad carbs" and "good fats" instead of "bad fats"
Dr. agatston invented this diet as an aid to patients with heart conditions, as a result of his detailed analysis of scientific studies completed on other diets.
"good" foods include, canadian bacon, skinless poultry, shellfish, cottage cheese, pecan halves, lowfat milk and certain vegetables, such as artichokes, broccoli and sprouts.

3 c All-purpose flour

1 c Bran flakes cereal; oat or w

4 ts Baking powder

1 ts Ground cinnamon

1/2 ts Salt

3/4 c Milk

1/4 c Vegetable oil

1/4 c Light brown sugar, packed

1 lg Egg

1 lg Red apple; cored

--unpeeled and coarsely chop 1 tb Butter; melted

Ground cinnamon; optional Recipe by: Country Cooking, Summer 1994 Preheat oven to 425 degrees; grease a large baking sheet. In a large bowl, combine flour, cereal, baking powder, cinnamon and salt. In a medium bowl, beat together milk, oil, sugar and egg. Add to dry ingredients along with chopped apple; mix lightly with a fork until mixture clings together and forms a soft dough. Turn dough out onto a lightly floured surface and knead gently 5 or 6 times. Divide dough in half. With a lightly floured rolling pin, roll one half of the dough into a 7-inch round; cut into 4 wedges. Repeat with remaining dough. Place scones one inch apart on prepared pan. Pierce tops with the tines of a fork. Brush tops with melted butter and sprinkle with additional cinnamon, if desired. Bake for 15 to 18 minutes, or until golden brown. Serve warm.
