The Atkins’ Diet
Originating way back in the 1960s, the atkins diet is still one of the most popular diets today. Although not accepted by all scientists, it supposedly allows weight reduction but still allows you to eat many foods that would not be part of a normal diet, for example beef and egg and cheese.
With this diet you are supposed to eat fat and protein, it is the carbs that are on the banned list. It is often referred to as a low carbohydrate/high protein, weight loss regime.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including, but not limited to, cereals and pasta made from white flour.
With the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods such as meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter & olive oil.

The Atkins’ Diet Theory
The theory of the famous atkins diet is that even though our bodies use both fats and carbs to burn into glucose, it is the carbs which are burned primarily. If we consume less carbs, we will deplete our fat and we will achieve weight loss. Although inviting, this theory is controversial, not all nutritionalists agree and some feel it is sometimes unsafe.

-----------------------------------CRUST----------------------------------- 1 Unbaked 9" Pie Shell

----------------------------------FILLING---------------------------------- 2 cn Pitted red tart cherries

16 oz size, reserve liquid

1/2 c Sugar

1 tb Cornstarch

1/4 c Liquid drained from cherrie

1 ts Lemon juice

1/8 ts Almond extract

----------------------------------TOPPING---------------------------------- 1 1/2 pk 8 oz size cream cheese

1/2 c Sugar

2 Eggs

1/2 ts Vanilla

1. Heat oven to 425 degrees. 2. For filling, drain cherries, reserving the

1/4 cup liquid. Combine sugar and starch in large bowl, lemon juice and

almond extract. Stir in cherries. Spoon into unbakes pie shell. 3. Bake at 425 degrees F. for 15 minutes. 4. For topping, combine cream cheese, sugar,

eggs and vanilla in bowl. Beat with electric mixer until well blended. Spoon over hot cherry filling. Reduce oven temperature to 350 degrees. Bake for 25 minutes. Cool to room temperature before serving.
