Oven Tips : Stagger pans and baking sheets on upper and lower racks to improve airflow, and don't cover racks with foil. Food cooks more quickly and efficiently when heat circulates freely.


Buying an Oven : If you need to purchase a gas oven or range, look for one with an automatic, electric ignition system. An electric ignition saves gas-because a pilot light is not burning continuously.


Oven Tips : Check the seal on your oven door for wear. Even a small tear or gap can allow heat to wander away from your meal. A clean seal also provides better heat retention.


Cook safely

Don't put anything metallic inside the microwave.
If the deep fat fryer oil starts to smoke don't put the food in. Turn off the heat and leave it to cool.

1/2 cup butter -- unsalted

3 cups mushroom -- sliced

4 tablespoons flour

1/4 teaspoon dry mustard

1 teaspoon salt

2 1/2 cups nonfat chicken broth

2 cups cream

1/4 cup chives -- chopped

1/4 cup sherry

sour cream & flat-leaf parsley -- garnish

Melt butter in large saucepan over medium heat. Add mushrooms and saute until j ust tender. Add flour, mustard and salt, stirring constantly for one minute or less. Flour should not brown or burn. Add broth and cook uncovered until mixtur e thickens. Stir in cream gradually and add chives. Heat thoroughly but do not boil. Add sherry just before serving.

Garnish with sour cream and top with a sprig of parsley.
