The Atkins’ Diet
First invented by doctor atkins in the 1960s, the atkins diet achieved most of its fame during the last decade. Although not accepted by all scientists, it supposedly allows fat reduction whilst allowing many foods that would not be part of a normal diet, such as lamb and butter.
With this diet you eat protein and fat, it is carbohydrates that need to be avoided. It is often referred to as a low carbohydrate/high protein, diet.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including cereals and pasta made from white flour.
With the atkins diet the foods you are encouraged to eat are nutrient-rich unprocessed foods such as meat, fish & poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil.

The Atkins’ Diet Theory
The logic behind the atkins diet is that if we eat less carbohydrates, we will deplete the fat we have stored and we will become thinner

1 1/2 c Quaker Oats, uncooked

-- (quick or old-fashioned) 1 Egg; beaten

1 c Sliced mushrooms

1/2 c Sliced green onions

1/2 c Sliced celery

2 tb Margarine or butter

1/2 c Chicken broth

2 tb Soy sauce

2 ts Sugar

6 oz Frozen pea pods; thawed

Combine oats and egg, mixing until oats are thoroughly coated. In medium skillet, saute mushrooms, green onions and celery in margarine 3 to 4 minutes or until tender. Add oats mixture; cook, stirring constantly, about 8 minutes or until oats are dry, separated and lightly browned. Add combined chicken broth, soy sauce and sugar; continue cooking 3 to 5 minutes or until liquid is absorbed, stirring occasionally. Add pea pods; heat through.
