4 1/2 pounds trimmed brisket -- to 5

1/3 cup Head Country Seasoning

1 tablespoon celery salt

1 tablespoon onion flakes

1/3 cup worcestershire sauce

1/2 cup Head Country Bar-B-Q Sauce

2 tablespoons black pepper

2 tablespoons liquid Barbecue Smoke?

OVERNIGHT PREPARATION: In small bowl blend seasoning together. Rub brisket all over with seasoning blend. Place a large sheet of heavy duty aluminum foil in a 9 x 13 pan. Place brisket in pan and add liquid smoke and worcestershire sauce. Fold foil securely around the brisket to seal. Place pan in refrigerator to marinate overnight.

TO BAKE: Bake brisket in 300 degree oven for about 4 1/2 hours. Unseal the foil and add 1 cup of Head Country Bar-B-Q Sauce over the brisket. Cook uncovered for an additional 45 minutes to one hour.

TO SERVE: Remove brisket from pan and let rest on cutting surface for 15 to 20 minutes. Slice across the meat's grain and serve. Reserve sauce from pan and thicken if desired or serve as is on the side.

TO MAKE CHOPPED BAR-B-Q BEEF: Chop cooked brisket. Place in large saucpan and add 1 cup Head Country Bar-B-Q Sauce. Cook over medium heat, stirring frequently, to thicken. Serve on toasted buns for a delicious sandwich.
