It's also very good for diabetes sufferers, as the low GI types of food are useful in reducing increases in blood glucose amount.

1 1/2poundfish fillets
1salt, to taste
1pepper, to taste
1eachonion, chopped
5tablespoonparsley, chopped
4teaspoonoil
2teaspoonlemon rind, grated
2teaspoonorange rind, grated
1orange and lemon slices

Directions:

butter crockpot and put salt and pepper on fish to taste. Then place fish in pot. Put onion, parsley and grated rinds and oil over fish. Cover and cook on low for 1 1/2 hours. Serve garnished with orange and lemon slices.
