The South Beach diet is a diet created by Miami, florida-area cardiologist arthur agatston which stresses that one should eat "good carbohydrates" instead of "bad carbs" and "good fats" instead of "bad fats"
Doctor agatston invented the south beach diet as an aid to patients with heart conditions, as a consequence of his analysis of scientific studies on other dietary studies.
Examples of good foods include, lean cuts of beef, turkey breast, shrimp, feta cheese, pistachio nuts, nonfat yoghurt and certain vegetables, like split peas, celery and turnips.

1/4 c French dressing

5 md Potatoes (cooked in skins)

1 c Celery, diced

1 md Onion, chopped

4 Eggs, hard boiled

1 1/2 ts Salt

1/2 c Mayonnaise

Pour French dressing over warm peeled potatoes, chill for 2 hours. Add celery, onion, egg and salt. Add salad dressing and mix carefully. Add 1 teaspoon of celery seed for a nice touch. Chill 4 hours. Randy Rigg
