1 Tbls coarse-ground fennel [buy whole seeds and

2 bay leaves -- crushed

1 Tbls dried parsley

3 cloves garlic -- crushed

1/8 tsp hot dried red pepper flakes

1 tsp salt

1/4 tsp pepper

65 ml water

1. Mix all the ingredients carfully, let stand for 1 hour, and mix again.

2. Stuff into casings or fry plain.
