He suggests a more gradual approach: Every week or month, replace one food in your diet that’s provided by a big, faraway company with a locally grown food.

1poundsausage, sweet italian
1teaspoonbasil
1cuponion, finely minced
1teaspoonsage
2teaspoongarlic, finely minced
1teaspoontarragon
3tablespoonbutter
1teaspoonoregano
3tablespoonolive oil
1ptheavy cream
1teaspoonthyme
1pasta of your choice, cooked, hot

Directions:

Heat a very large skillet, melt butter and oil and saute onion and garlic until translucent. Add sausage meat and spices to the onion mixture and cook on moderate heat for 10 to 15 minutes, or until the sausage is completely cooked. Add the cream and reduce by one-third. This should take about 5 minutes on moderate heat. Stir very frequently to insure it doesn't stick or burn. Taste, adjust seasoning with salt and pepper and whatever else you want to add. Pour over hot pasta and serve.
