General tips

Buy Fairtrade Food : The FAIRTRADE Mark is an independent consumer label which appears on products as an independent guarantee that disadvantaged producers in the developing world are getting a better deal.

For a product to display the FAIRTRADE Mark it must meet international Fairtrade standards. These standards are set by the international certification body Fairtrade Labelling Organisations International (FLO).

Producer organisations that supply Fairtrade products are inspected and certified by FLO. They receive a minimum price that covers the cost of sustainable production and an extra premium that is invested in social or economic development projects.
  • Find out which fair trade products are available at which supermarkets
  • Get involved in fair trade campaigns.

Oven Tips : If you don't have one, consider buying a self-cleaning oven. They use less energy for normal cooking because of higher insulation levels. They also save on your rubber glove and cleanser purchases! However, if you use the self-cleaning feature more than once a month, you'll end up using more energy than you saved. When you clean the oven, do it right after cooking to take advantage of residual heat.

Buy Local Food : It’s easy to take locally abundant foods for granted when they’re in season, but you can enjoy many locally produced foods out of season by stocking up. Storing big baskets of hazelnuts (in the Northwest) or pecans (in the Southeast) will come naturally if you start thinking like a squirrel. Look for foods that keep well, such as nuts, honey, winter squash and sweet potatoes and stock up.

Cooking safety

Don't put oven gloves or tea towels down on the cooker after you've used them.
Don't dry clothes in the microwave.

Ingredients And Procedures

1/2 c Starter

1 c Undiluted evaporated milk

2 c All-purpose flour

1/4 c Soft butter

3 T Sugar

1 Egg

1 1/2 c (or more) All-purpose flour

1/2 t Baking soda

1 t Baking powder

1 t Salt

2 T Melted butter

1/4 c Packed brown sugar

1 1/2 t Cinnamon

1/4 c Raisins (optional)

Melted butter Combine starter, evaporated milk and 2 c flour in large bowl; cover and leave at room temperature overnight. The next morning, beat together butter, sugar and egg; blend into sourdough mixture. Combine the 1 1/2 c flour, soda, b. powder and salt; mix with other mixture. Turn onto floured board and knead until the surface is satiny and doesn't stick to board (add flour if necessary). Place ball of dough in the center of board and roll out to a rectangle 8" by 16". Brush with melted butter and sprinkle with a mixture of brown sugar, cinnamon and raisins. Roll up dough, jelly roll fashion. Cut at 1 3/4" intervals with sharp knife to form 9 rolls.

Dip top and bottom of each roll in melted butter and place in a 9" square pan, cover loosely and let rise in a warm place for about an hour, until nearly doubled. Bake 375 degrees 30 to 35 minutes, or until crust is dark golden. Makes 9 large rolls. -----
