The Atkins’ Diet
First invented by doctor atkins in the sixities, the atkins diet is still one of the most popular diets today. Although highly controversial, it allows weight loss whilst allowing you to eat many foods that would not be part of a normal diet, eg beef and some dairy produce.
With the atkins diet it is considered good to eat fat and protein, avoiding carbohydrates almost completely. Because of this, it is known as a low carbohydrate/high protein, diet system.
With this diet, the foods you should avoid are processed and refined sugar, milk, white bread, starchy vegetables, white rice and white flour, including, but not limited to, cereals and pasta made from white flour.
Unlike other diets, on the atkins diet the foods you are encouraged to eat continues to be nutrient-rich unprocessed foods like meat, fish and poultry. You also can eat shellfish, regular full fat cheese, butter and olive oil.

The theory of the atkins diet is that if we consume fewer carbs, our bodies will consume the fat we already carry and we will lose weight

1/2 c Butter or margarine; softene

1 c Light brown sugar, packed

2 Eggs

1 ts Vanilla extract

2 c All-purpose flour

2 ts Baking powder

1 ts Baking soda

1/4 ts Salt

1 c Sour cream

1/4 c Milk

4 oz Shredded cheddar cheese

1 c Dried apples; diced

1/2 c Walnuts; coarsely chopped

Recipe by: Favorite Recipes, Treasury of Christmas Preheat oven to 350 degrees; greas a 9 x 5 x 3-inch loaf pan. Beat the butter and sugar in a large bowl with an electric mixer on medium speed until light and fluffy. Beat in the eggs and vanilla extract until blended. Combine the flour, baking powder, baking soda and salt in a small bowl. Add to the butter mixture on low speed alternately with the sour cream and milk, beginning and ending with flour mixture. Mix well after each addition. Stir in the cheese, apples and walnuts until blended. Spoon the batter into the prepared pan and bake for 50 to 55 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes. Remove from the pan and cool completely on a wire rack. Store tightly wrapped in plastic wrap at room temperature. Makes 1 loaf. Penny Halsey (ATBN65B). -----
